Wine-making process: First sorting out in the vine, a second one at the press, crushing, destemming, cold soaking, Rosé de Saignée method during 48-72 hours. Alcoholic fermentations under temperature control. No malolactic fermentation.
Blending: L164B Blending of the harvests 2015 (90 %) /2014 (10 %)
Ageing & dosage: The bottles are aged in the cellars during 24 months at least. Disgorging of each cuvée is made 3 months before shipment, with a special liqueur of MCR type (rectified concentrated must) at a rate of 6 gr/L.

This is the result of a short maceration of the Pinot Noir and Pinot Meunier grape varieties at the harvest. A sparkling ruby colour AND the bubbles are thin and dynamic. In the nose, this Champagne opens up on aromas OF BLACKCURRANT, preserve raspberry and slightly buttered sponge fingers. The palate is fresh and lasts with notes of red fruit jam, bitter oranges and a lively finish on blood orange.

Perfect for your “all with Champagne” meals as well as with fruit desserts such as red fruit pie, clafoutis or strawberry soup.
