Wine-making process: Direct pressing of the whole harvest with separation of juices and removal of auto pressing. Cold racking must of juices, alcoholic fermentations under temperature control.
Partial malolactic fermentation.
Blending: L172B Blending of the harvests 2016 (60 %) / 2015 (30 %) / 2014 (10 %)
Ageing & dosage: The bottles are aged in the cellars during 36 months at least. Disgorging of each cuvée is made 3 months before shipment, with a special liqueur of MCR type (rectified concentrated must) at a rate of 40 gr/L.
Packaging: Half-bottle (37.5 cl) & bottle (75 cl).

A delicate PALE-YELLOW colour and thin bubbles which form thin carbon dioxide chains. The first nose releases light notes of candied fruits, stone fruits and honey. The palate is absolutely similar to the nose and reveals a good harmony between the freshness of the Chardonnay grape variety and the sweetness of the Demi-Sec (medium-dry) with aromas of marzipan, grape and candied lemon.

This cuvée will be perfect to be drunk with an exotic fruit salad, an apricot pie, a lemon sorbet but also with a sabayon (zabaione).
