GRAPE VARIETY: 100 % made with Chardonnay
Terroir: Chouilly Grand Cru – Old Vines
Vine management: Sustainable viticulture – High Environmental Value
Wine-making process: Direct pressing of the whole harvest with separation of juices and removal of auto pressing. Cold racking must of juices, alcoholic fermentations under temperature control. 70 % in stainless steel vats + 30 % in Burgundy barrels. No malolactic fermentation.
Blending: L305B Vintage 2008, 2018 immersion under the sea.
Ageing: The bottles are aged in the cellars during 48 months at least and then, they are aged during 12 months under the sea, at a depth of 60 meters off the coast of the Ouessant island in Brittany.
Conditions of ageing under the sea: The Atlantic Ocean offers ideal ageing conditions with a constant temperature of 13°C in any period of the year and a total darkness.
Packaging : Bottle (75 cl) + box

A first pure nose, iodized. Do not hesitate to carafe your Champagne so that it can release its aromatic potential such as notes of cocoa, roasting, but also ripe fruits and then bloom in a supple and round mouth of candied fruit and finish with a beautiful vivacity.
