GRAPE VARIETY: 100 % made with Grand Cru Chardonnay.
Terroir: Côte des Blancs
Vine management: Sustainable viticulture – High Environmental Value
Wine-making process: Direct pressing of the whole harvest with separation of juices and removal of auto pressing. Cold racking must of juices, alcoholic fermentations under temperature control.  No malolactic fermentation.
Blending: Selection of the harvest 2008.
Ageing & dosage: After having aged in bottles “on laths” during 72 months at least, each cuvée is disgorged 3 months before shipment, with a special liqueur of MCR type (rectified concentrated must) at a rate of 4 gr/L.
Packaging: Bottle (75 cl)

An elegant lightly golden-yellow colour and thin and regular bubbles. The first nose is fresh and delicate and reveals notes of white flowers and an iodine touch. When it opens up, the nose expresses richness and generosity. The palate brings elegant flavours of honey, liqueur and coffee. This wine is a remarkable wine due to its perfect balance between richness and a delicate chalky touch.

Serve it between 6° and 8°C. It will be ideal to be drunk during a pre-dinner composed of Bayonne ham, shrimps or during the meal with a rack of veal, a beef carpaccio or a mirabelle plum pie.
